Curried Lentil Soup




I made this soup last weekend, and thank goodness I did because it was great for quick dinners throughout the week. The lentils make it nice and hearty, which was also great for week 2 of my cleanse. It had a mild spice using the amount of spices in the recipe, so add a couple more dashes of each spice if you want it spicier.

It is cold and rainy outside, the perfect day to have a big bowl of a healthy warming soup. Go make yourself a pot!

Curried Lentil Soup
What you need:
2 T. olive oil
1 big onion, chopped
3 cloves of garlic, minced
2 large carrots, chopped
3 celery stalks, chopped
1-2 T. curry powder
1 t. garam masala
1/2 t. coriander
1 t. tumeric
shake of salt & pepper
1.5 cups lentils (green or french lentils work)
5 cups of water
.5-1 can half fat coconut milk

Make it:
1. Heat olive oil in large pot, add onions and cook till softened- 5 mins
2. Add garlic, celery, carrots, and all spices. Cook over med. heat for another 5 min.
3. Add lentils, water, and coconut milk. Bring to simmer for 30-40 min. Taste and adjust spices. Done when lentils are soft.


 Super easy, super tasty, and the kind of soup that will get you through the sometimes dreary days of January! Enjoy.
